Fried chicken - My way

Ingredients:



  • chicken
  • 1/2 tbsp garlic paste
  • 1/2 tbsp ginger paste
  • salt
  • 1 1/2 tbsp soy sauce
  • fragrant spice (cardamon, cloves, cinnamon)
  • 1 egg
  • 2 tbsp corn flower
Procedure:

  1. clean chicken and dry properly
  2. mix all the ingredients with the chicken and let it marinate for at least 5-6 hours
  3. coat the chicken with bread crumbs.
  4. fry the chicken in hot oil

Coconut Mustard Prawn

Ingredients:

  • 2 medium size onions ( chopped )
  • 2 Chili peppers (optional)
  • 1/3 tsp garlic paste
  • 1/3 tsp ginger paste
  • 1/4 cups coconut (graded)
  • 1/2 tomato (chopped) - (optional)
  • 1/2 cups of mustard
  • 10-12 medium sized prawn
  • 1/2 tbsp corn flower
  • water
  • oil
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp chili powder
  • mustard seeds (optional)
Procedure:
  1. mix 1/2 tbsp of cornflower, water and 1/2 mustard in a bowel or cup and leave aside for later.
  2. Marinate the prawns with turmeric and chili powder and leave for 15-20 mins. 
  3. in a medium size pan, fry some mustard seed in some oil at LOW HEATED Flames!
  4. add the onion, garlic paste and ginger paste.cook for 15 mins or until the onions are golden brown.
  5. add coconut and cook for 10 mins. if you want you can add the chili peppers at this stage.
  6. add the mustard sauce, cumin powder and coriander powder. stir and cook for another 2 mins.
  7. add the prawns and some water
  8. cook for 5-8 mins. ( you dont want to over cook prawns they usually take 5 mins to cook completely) 
  9. garnish with coriander leaves
  10. Enjoy with white rice

Kung Pao Chicken

Ingredients:
  • 1 Chicken Breast (cut into cubes)
  • 2 tbs of Soy Sauce
  • 2 tbs of Sesame oil
  • 2 tbs of cornstarch
  • 1 tsp of while vinegar
  • 2 tsp of sugar
  • 1 small onion (minced)
  • 1 tbsp of garlic (minced)
Extra ingredients you can add to put a twist on the dish are:

peanuts 
cashew nuts 
tomato 
green pepper

    Procedure:
    1. in a bowl mix, 1 tbs of soy sauce, 1 tbs of sesame oil, and 1 tbs of cornstarch. Add the chicken cubes. Marinade the chicken for 30 mins in the fridge.
    2. after 30 mins take out the chicken from the fridge, remove it from the marinade and saute in a large skillet until the meat is while and juice is running clear. 
    3. take the chicken off the heat and keep aside.
    4. in a small sauce pan, combine 1 tbs of soy sauce, 1 tbs of sesame oil, white vinegar and sugar.  (DONT turn on the stove yet). In a small glass, combine 1 tbs of cornstarch and some water, mix well, then put it in the sauce pan. NOW turn on the stove at a Low heat and stir.
    5. add the onions and garlic
    6. when the sauce is thickened a little add the chicken and let it simmer together until the sauce is really thick.
    7. serve with White Rice.

    Ingredients: Cubed chicken, Garlic, Onion and Coriander leaves (optional)

    sauce is thickened and ready to serve

    serve with rice

    Teriyaki Beef

    Ingredient:
    • sliced beef
    • green pepper (sliced)
    • tomatoes (sliced)
    • mushroom (sliced)
    • sesame oil (sliced)
    • teriyaki sauce (sliced)
    • onion (chopped)
    Procedure:
    1. Marinate the sliced beef with teriyaki sauce for 4 hours - 24 hours
    2. in a frying pan, add some sesame oil and fry the sliced beef for 8-10 mins. save the reminder marinate
    3. remove the fried beef from the oil and drain with on a paper towel.
    4. in the same oil add onion, green pepper, tomatoes, and mushroom. stir fry the vegetables and add the rest of the marinate to the pan. cook for 5 mins.
    5. add the sliced beef and cook for another 5 mins
    6. serve with steamed rice
