Beef Biyrani - eid style

Ingredients:

  • 1 kg beef
  • 2.5 cups of aromatic rice (soak in water for 30 mins)
  • 2-3 tbs. Garlic paste
  • 2-3 tbs. Ginger paste
  • 1 tsp turmeric powder
  • 1 tsp chili powder 
  • 2-3 tbs of biyrani masala 
  • 3-4 pepper corns
  • 2-3 bay leave
  • 2-3 cardamon
  • 1-2 cinnamon sticks
  • 2 medium size onion (chopped)
  • 2 medium size tomato (chopped)
  • 3 -4 tbs of ghee
  • salt
  • water
  • tasting salt
Procedure:
  1. cut beef into medium size pieces. in a pot add turmeric powder, chili powder, some salt and 2 cups of water. add the beef into the water and boil for about 45 mins at a low-medium heat and make sure it is covered. (if the water evaporates after 15-20 mins,  add 1/2 cup till the meat is tender)
  2. heat a nonstick pot [medium-high heat], add ghee (2-3 tbs) and fry the beef (this helps to lock in the flavor)
  3. remove the beef and place on a paper towel to drain the excess oil.
  4. in the same nonstick pot[low heat], add onion, 3-4 pepper corns, 2-3 bay leave, 2-3 cardamon,1-2 cinnamon sticks and a pinch of salt. cook for about 3-5 mins. just to get the onions golden brown.
  5. add the beef , garlic paste, and ginger paste into the nonstick pot. fry for 1-2 mins.
  6. add 1.5 cups of water and let the beef simmer for 6-8 mins. (if you like to add vegetables like potato, peas, carrots etc. please add them now.)
  7. add 2-3 tbs of beef biyrani masala. mix well. (wait another 10-15 mins)
  8. add the tomato.
  9. in another pot, add 10 cups of water, salt, tasting salt and aromatic rice. let the rice boil for about 5-8 mins. the rice should be 3/4 cooked. After boiling, drain the water.
  10. Place the aromatic rice on top of the beef curry mixture. (by this time the beef [and vegetable] should be cooked)
  11. cover the pot (low heat) and let it cook for another 15 mins. (check the rice occasionally) 
  12. turn off the stove, let the biyrani REST for about 20 mins (with lid off)
  13. before serving, mix with a big spoon to get the curry mix over the rice
  14. enjoy with fresh salad
